Description
Beans that are red and light speckled, often called pinto beans or cranberry beans, are medium-large oval legumes that have a base color of creamy beige or light pink with speckles of crimson or reddish-brown. Their gentle, nutty taste and silky, creamy consistency when cooked make them a fan favorite.
In addition to being high in antioxidants, fiber, folate, and plant-based protein, these beans also contain iron. Latin American, Mediterranean, and South Asian cuisines all make frequent use of them in stews, soups, chili, and rice dishes.
